We made pickles (and pickled beets)! Well hopefully they turn out all right. I’m going to have to wait three whole weeks to find out.
Ingredients: Fresh dill and Kirby cucs from the Union Square Farmers Market, beets, vinegar and non-iodized salt, garlic, chili flakes and peppercorns.
We cut the cucs into spears, slices, and for one jar we kept them whole. We also made sure to sterilize the jars and place them in the fridge afterwards since we didn’t have a proper canner.
